Copycat Olive Garden Zuppa Toscana Soup & Breadsticks Recipe
Ingredients:
- 1 lb of Ground Italian Sausage
- We chose Johnsonville Mild Sausage, but feel free to pick the sweet or even hot if you prefer your dish less or more spicy.
- Crispy bacon (4-6 slices)
- 2 Medium Yellow Onions or 1 Large Onion (diced into small piece)
- 2-3 cloves are garlic – minced (You can use jarred, minced garlic to save time)
- 2x (two) 32 fl oz Cartons of Chicken Stock or 8 cups
- We used Swanson’s. Want to kick up the heat? Swanson’s Spicy Chicken Stock is new and phenomenal. The low sodium stock tastes great with this recipe too)
- 1.5 lbs of Russet Potatoes or Yukon Gold will work too which was about 6 potatoes (Slice them into thin slices, we did about 1/4 moons)
- 1 cup of heavy whipping cream
- 2 cups of Kale (without the stems as they can be bitter and hard)
- Seasonings: Salt & Pepper to taste, Red Pepper Flakes (optional for some extra heat) 1/2 tsp
- A block of fresh Parmesan
- Box of New York Bakery Frozen Breadsticks with Garlic – 10.5oz (Pre-made & so yummy!)

How to Make Copycat Olive Garden Zuppa Toscana Soup
- Start by cooking your Italian Sausage until browned, over medium heat in a large pot. These Carote Dutch ovens are the perfect cooktop-to-table pots!
- Remove the sausage once browned and fry up your bacon in the same pot until semi crispy, then remove and chop.
- Once both meats are set aside, go ahead and start on your vegetables. Throw in the onions first, get them slightly translucent and cooked down. Then add the garlic until fragrant (don’t burn).
- Once the garlic becomes fragrant, add the chicken stock and bring to a boil on med-high heat.
- When the broth has come to a boil, add your potatoes (reduce heat to medium and simmer until potatoes become tender). This takes around 20 minutes.
- After potatoes have become tender, add the heavy whipping cream, kale, and both of the meats back into the pot!
- Season with salt, pepper, & red pepper flakes to taste.
- Stir and simmer for another 5 minutes until the kale simmers down. Let everything simmer together for that rich, creamy Olive Garden flavor everyone loves!
- Grate some fresh Parmesan for that final chef’s kiss touch
