- 2 Cups of Cooked White Rice
- 2 tbsps of lime juice (we used fresh lime feel free to use lime juice)
- 2 tbsps of chopped cilantro (you one of those people who thinks it tastes like soap? haha – SKIP IT)
- 1 tbsp of butter or olive oil
- 1/2 tsp of salt
(mix all ingredients together while the rice is still warm)

Chipotle-Style Chicken Ingredients
- 1.5 lbs of boneless, skinless chicken thighs or breasts
- 2 tbsps of olive oil
- 2 tsps of chili powder
- 2 tsps of smoked paprika
- 1 tsp of cumin
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1/2 tsp of oregano
- 1 tsp of salt
- 1/2 tsp black pepper
- 1 whole lime (juiced)

Instructions for the perfect Chipotle Chicken:
- Toss chicken with all of the seasonings listed above plus the olive oil and the lime juice.
- Marinate for 30 minutes (overnight is even better if you can).
- Cook in a skillet or on a grill over medium-high heat for 5-7 minutes per side until cooked through! (165 F is where chicken should be completely cooked).
- Let rest for 5 minutes, then chop into small bite size pieces!

Corn Salsa
- 1 cup of corn (fresh, canned, or frozen)
- 1/4 cup of diced red onion
- 2 tbsp of chopped cilantro
- Juice 1/2 of a lime
- Salt to taste
(mix and chill)
Seasoned Black Beans
- 1 can of Black Beans drained & rinsed
- 1/2 tsp of cumin
- 1/2 tsp of garlic powder
- pinch of salt
(warm everything together in a saucepan)

Pico De Gallo
- 2 Roma Tomatoes, Diced
- 1/4 cup of white onion, diced
- 2 tbsps of cilatnro bvc
- Juice of 1/2 of lime
- Salt
(mix together)

Homemade Guacamole
- 2 ripe avocados
- Juice of 1 lime
- 2 tbsp of cilantro
- 2 tbsp of diced onion
- salt
(Mash the avocados until mostly smooth, then stir in the lime juice, cilantro, onion, and salt.)
Optional Burrito Bowl Toppings
- Shredded Romain Lettuce
- Sour Cream
- Shredded Monterey Jack or Queso Chihuahua
- Jalapenos
- Hot Sauce (Green Tabasco is a great choice)
