Each week, we’re sharing an easy, budget-friendly meal idea to help take one thing off your plate (sometimes literally—hello, one-dish dinners). This week it’s a creamy Boursin orzo bake with tomatoes and spinach. It’s simple to make, easy to customize, and delicious with or without an added protein.

What You’ll Need
- 1½ cups orzo
- 1 package Boursin Garlic & Fine Herbs cheese
- 3 cups chicken or vegetable broth
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 2 cloves garlic, minced (or 2 teaspoons jarred minced garlic)
- 1 tablespoon olive oil
- ½ teaspoon oregano or Italian seasoning
- Salt and pepper, to taste
- Optional: red pepper flakes for a little kick
- Optional: cooked shrimp, rotisserie chicken, or seared Polska sausage

Let’s Make It
- Preheat your oven to 400°F.
- Place the Boursin in the center of a baking dish. Add the orzo, tomatoes, broth, garlic, olive oil, seasoning, salt, and pepper around it.
- Bake uncovered for 25–30 minutes, until the orzo is tender and most of the broth has been absorbed.
- Stir everything together until the Boursin makes a creamy sauce. Fold in the spinach and let the dish sit for 5 minutes before serving.
- Stir in your choice of cooked protein, if using. We love the shortcut of rotisserie chicken, or Polska sausage seared in a skillet.
If the orzo needs a little more time: Stir in another ¼–½ cup broth, cover the dish with foil, and bake for 5–10 more minutes.

That’s dinner! Serve it on its own or add garlic bread for scooping up every last bit of that creamy sauce.
